&lt;/span&gt;The Canadian Diabetes Association is putting on Expos targeted at communities  with high rates of Type 2 diabetes. Yesterday was the first one to happen in the  Black community. When we arrived at the Jamaican Community Centre, I was  impressed with how packed the room was! The event ran from 9am-3:30pm. I arrived  at 12:30pm and most people were eating their free lunch. &lt;br /&gt;

&lt;br /&gt;

I brought a  diabetic friend whom I didn&amp;rsquo;t tell where we were going until we got there. My  friend and I had been arguing all week. Me saying: &amp;quot;This is something we&amp;rsquo;ll  learn from. If I tell you where we're going, you won&amp;rsquo;t want to go&amp;quot;. My friend  kept bugging me for more details and threatening to not go. In the car heading  towards the Expo, I explained where we were going. There was no comment. The  same reaction my friend gives when I talk about all the knowledge of Diabetes  prevention and management I am constantly sharing. &lt;br /&gt;

&lt;br /&gt;

Our time at the expo  unfortunately didn't last long. My friend went straight for the free lunch which  consisted of Jerk Chicken, Salad, Rice (with veggies and beans it looked like.)  and pasta. I saw some melon on someone&amp;rsquo;s plate. While my friend ate, I checked  out the exhibitor tables consisting of dietitians giving advice, various health  organizations (Canadian Cancer Society, The Kidney Foundation, Osteoporosis  Canada, Canadian National Institute of the Blind) and health care providers  doing blood glucose testing. There were three community health centres (Black  Creek, New Heights and Rexdale) displaying and providing interactive information  about the variety of programs focused on the prevention and management of  diabetes in the high risk communities. Of course, there were corporate  organizations there (Bayer and Nestle). I saw only one table selling a food  product which was &lt;strong&gt;wild rice (Canoe Wild Rice)&lt;/strong&gt;. Interesting as that&amp;rsquo;s the grain  on the menu for the &lt;a href="http://tinyurl.com/yalbpf4"&gt;April 20th cooking for  Diabetes class. &lt;/a&gt;&lt;br /&gt;

&lt;br /&gt;

When I was finished looking at the tables, my friend  was finishing up lunch and asked if we could leave, just as a presentation about  mammogram testing was being put on by actors. &lt;br /&gt;

&lt;br /&gt;

On the way out, I passed a  woman entering the room with a look of amazement on her face, saying out loud,  &amp;ldquo;wow, there are a lot of black people with Diabetes.&amp;rdquo; It was then that I  realized how important bringing awareness of diabetes is. Attendees saw friends  from their community which lets people know they are not alone and there is  support. This expo gave much needed exposure of the resources that can help  prevent and manage this disease. I'm hoping that people got more out of the Expo  than the free lunch. My friend didn&amp;rsquo;t talk about it in the car but promised to  read the literature take home bag (sponsored by Boost). Building awareness is a  good start. &lt;br /&gt;

&lt;p&gt;Close to 60 years ago, Peter Ratuski purchased the first grains of Indian-finished wild rice, effectively starting the family owned business that is now Shoal Lake Wild Rice Ltd.&lt;/p&gt;

&lt;p&gt;Peter?s sons Ben and Bill, current owners of the business, picked up on this aspect of their father?s interest and have developed it into the respected business it is today.&lt;/p&gt;

&lt;p&gt;Wild rice, indigenous to this area, has been a staple food for the native population for centuries. This naturally grown product is harvested each fall and that is when Shoal Lake Wild Rice is at its busiest.&lt;/p&gt;

&lt;p&gt;Purchasing the freshly picked wild rice from harvesters in northwestern Ontario, the Manitoba Whiteshell area, northern Manitoba and northern Saskatchewan, the Shoal Lake Wild Rice processing plant burgeons with activity. The company processed one-third of the 3 million pound Canadian rice harvest in 1987.&lt;/p&gt;

&lt;p&gt;Normally staffed with two full-time and three part-time employees during the greater part of the year, 10 more people are hired to help in various stages of processing.&lt;/p&gt;

&lt;p&gt;After the first stage, curing, where the kernels are turned from green to black by moistening with water and turned over, it is roasted in gas-fired ovens.&lt;/p&gt;

&lt;p&gt;The roasting stage is an important step in the processing as the roasting imparts a distinctive nutty flavor; a delicate hand is needed to obtain the right degree of roasting.&lt;/p&gt;

&lt;p&gt;After roasting, the kernels are separated from the chaff via a gravity fed system - as the business is situated on a slope. The kernels are then graded according to size and put into 100 lb bags. These 100 lb bags are in turn repackaged throughout the year in various sizes. &lt;br /&gt;

'We're not a novelty item any more,&amp;nbsp; it's become a mainstream product,' notes Ratuski, whose Canoe&amp;trade; brand wild rices are showing up on shelves across the West. While past consumer deterrents have been cost and convenience, Ratuski says the company has developed strategies to overcome these factors. 'We're selling the product pre-cooked in tins, which takes away the long cooking time (wild rice takes upwards of 50 minutes to prepare). And we're selecting shorter grains to blend with other rices, usually long-grain whites. This makes for a product that not only cooks faster, but has a more attractive price.' &amp;quot;&lt;br /&gt;
