CRANBERRY WILD RICE MUFFINS
1 1/2 cups sifted all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/4 cup sugar
1/3 cup fresh cranberries (chopped)
1/2 cup milk
1 1/2 tsp orange rind
1/4 cup orange juice
1 egg lightly beaten
4 Tbsp melted butter
1 cup cooked Wild Rice
Sift dry ingredients together into mixing bowl.
Combine all other ingredients and stir into dry ingredients until well blended. Spoon into greased muffin cups.
Bake 425 degrees F for 25 minutes.
Yield: 12 muffins
WILD RICE FRUIT DESSERT
3 cups Wild Rice
3/4 cup brown sugar
dash ground coriander
fruits or fresh berries
3/4 cup slivered almonds or broken walnuts
heavy cream, whipped if preferred
Combine all ingredients except for cream. Let set for a few hours.
Top with cream when served.
